- In a greased pan, stir fry galangal & lemon grass along with kafir lime leaves. Add Thai Curry Paste ( Red or Green) and toss in your vegetables.
- Cook this mix on high heat for 5 minutes. 
- Turn the flame on low, add in thick coconut cream and combine well. 
- Add a cup of water and simmer on medium-low heat until the gravy thickens slightly. 
- Add coconut milk to adjust consistency. Check for seasonings and garnish with lemon leaves.
