Make this traditional log cake from Switzerland with rich cream and luscious strawberries!

Ingredients:

✦ Strawberries (chopped) | 15
✦ Strawberries (halves) | 5
✦ Lemon | 2 tablespoons
✦ Caster Sugar | 5 teaspoons
✦ Water | 2 tablespoons 
✦ Self-raising Flour | 1 1/4 cup 
✦ Icing Sugar | 2 tablespoons
✦ Baking powder | 1/2 teaspoon 
✦ Baking Soda | 1/2 teaspoon 
✦ Condensed Milk | 300 grams
✦ Butter (melted) | 80 millilitere 
✦ Vanilla Essence | 1 teaspoons
✦ Whipped Cream | 3 tablespoons
✦ Whipped Mascarpone Cream | 3 tablespoons

Cooking Instructions:
✦ Add strawberries, sugar and water to a pan and cook on low flame till the strawberries soften.
✦ In a bowl sift self-raising flour, icing sugar, baking powder and baking soda.
✦ Mix condensed milk, butter and vanilla essence. Let it rest for 5 minutes.
✦ Whisk the batter, add water and mix well.
✦ Grease and line a tray with parchment paper and spread the batter evenly over it. 
✦ Bake in a preheated oven for 8 minutes at 210°C.
✦ Let the cake cool down slightly and de-mould over a fresh kitchen towel. 
✦ Dust some icing sugar over it and roll it. 
✦ Keep it rolled for 8 minutes.
✦ Add lemon juice to the strawberry mixture once it has cooled down.
✦ Unroll the cake, spread the strawberry jam, apply whipped cream and roll it again.
✦ Let it refrigerate for 1 hour. 
✦ Pipe some whipped mascarpone cheese over the cake. 
✦ Garnish with fresh strawberries and mint.
