- 1 1/2 cups all-purpose flour
- 1 1/2 fresh pumpkin diced
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1/2 cup water
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves (optional)
- 1/4 teaspoon ground ginger (optional)
Instructions:
- Prepare Pumpkin: Steam or boil pumpkin chunks until tender, then mash or puree them. Measure out 1 cup of pumpkin puree.
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
Mix Wet Ingredients: In a large bowl, whisk the pumpkin puree, oil, eggs, and water until well combined.
- Combine Dry Ingredients: In another bowl, mix flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.
- Combine and Mix: Gradually add the dry and wet ingredients, stirring until just combined.
- Bake: Pour the batter into the prepared loaf pan. Bake for 60-70 minutes, or until a toothpick inserted into the center comes clean.
- Cool: Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
