This Spanish classic is something you will love! Do give it a try and enjoy this delicious meal!
How to prepare:
1. Sauté some peppers and asparagus separately till cooked and keep them aside.
2. Heat oil in a pan, add the onion and garlic, and sauté.
3. Add the potatoes and French beans and cook! Add the tomatoes and peppers and cook for 5-6 mins.
4. Now add the tomato purée and smoked paprika. And cook for 4-5 mins.
5. Now add 4 1/2 cups vegetable broth and salt, let it heat up.
6. Add 2 pinches of saffron and mix.
7. Now add 1 1/4 cup short grain rice and cover and cook till half done.
8. Now arrange the cooked peppers and asparagus on top and cover and cook again.
9. Once the rice is cooked (without stirring), open the lid.
Serve with lemon wedges and parsley!
