Make this comforting tangy and creamy tomato sauce pasta at home for your loved ones!
Cook Time: 45 minutes | Serves 2
Ingredients:
➤ 60 gms of Penne
➤ 200 gms Cherry Tomatoes
➤ 1/2 an onion
➤ 10 gms Garlic
➤ 5 gms Basil
➤ 40 gms Feta
➤ Salt (to taste)
➤ Pepper (to taste)
➤ 10 ml Olive Oil
Preparation
➤ Pre-boil the pasta in salted water till al-dente.
➤ Reserve some pasta water.
➤ Blend the tomatoes in a mixer.
➤ Dice half an onion into small dice.
➤ Mince the garlic finely.
To make the Pasta:
➤ Add olive oil to the pan and add some onions.
➤ Turn the flame on to medium heat.
➤ Cook the onions till they turn soft and translucent.
➤ Add in the garlic at this point.
➤ Sauté this for 5 minutes and add in the tomato puree.
➤ Add some pasta water and reduce it for 2 to 3 minutes.
➤ Cook the pasta in the sauce until it all comes together.
To serve:
➤ Pour the pasta into a serving plate.
➤ Add dollops of feta to the plate.
➤ Add a few sprigs of basil.
