Episode 5: Tawa Sabzi

In Chef's Words..

"Tawa Sabzi at weddings would always be my most favourite ! It’s tasty, easy to make, can be pre prepped prior and also looks super exciting"

How to make?

• 200g Lady finger, tops and ends removed
• 200g Carrots, cut lengthwise
• 100g French Beans, cut lengthwise
• 100g Babycorn, cut lengthwise
• 1 medium Cauliflower, cut into florets
• 2-3 broad chillies, cut lengthwise
• 5-6 baby brinjals
• 8-10 medium sized potatoes, washed, peeled and cut into halves
• Oil, for brushing or frying

Some Red Chilli Powder, Jeera Powder , Kala namak & salt for putting on cooked veggies
 
For the gravy-
• 2 tbsp oil
• Whole garam masala
• Chopped ginger
• Chopped chillies
• 7-8 garlic cloves, chopped
• 2 big onions, chopped
• 2 big tomatoes, chopped
• 1 cup tomato puree
• Salt, taste
• Black pepper powder
• 1 tsp Coriander powder
• 1 tsp red chilli powder
• 1/2 tsp Turmeric powder
• 1/4 cup Cashew paste
• Kasuri methi
• Jeera powder
• Garam masala
• Water, as required
• Chopped coriander leaves

- Take a curved tawa this will ensure that the heat is distributed & controlled
- Add a little water in the centre of the tawa to put the gravy & cook the veggies on medium flame
- The veggies can be fried or air fried. This will ensure that the final cooking time is reduced.
