Make this easy stuffed bell pepper dish in the comfort of your kitchen.
Cook time: 30 minutes | Serves 2 to 4
Ingredients:
➤ 4 Yellow Bell Peppers
➤ Olive Oil (for brushing)
➤ 3 medium-sized Potatoes
➤ 20 gms Carrots (finely chopped)
➤ 5 gms Garlic (finely chopped)
➤ 1 tbsp. Butter
➤ 2 tbsp Cream
➤ 4 tbsp. Grated Cheese (Mozzarella/ Cheddar/ Monterey Jack)
➤ 1 & a 1/2 tsp Rosemary
➤ 4 tsp. Coriander Stems (chopped)
➤ 1 tsp. Smoked Paprika
➤ 1/4 tsp. Cracked Pepper
➤ 1/4 tsp. Brown Sugar
➤ Salt (to taste)
To make the mash:
➤ Peel & boil the potatoes in cold salted water until soft and mashable.
➤ Drain the potatoes and put them back on the stove and mash till entirely soft.
➤ Mince the garlic and keep aside.
➤ Peel and chop the carrots into fine dice.
➤ Saute the garlic in butter and add the carrots with a few drops of water once soft.
➤ Cook for 4 minutes, turn off the flame and add sugar, spices and herbs.
➤ Mix in the potato mash, cream and chopped cilantro stems and combine thoroughly.
To make the Stuffed Bell Peppers:
➤ Slice the peppers from the cap & remove the seeds.
➤ Wash & pat dry with a towel
➤ Bake these in the oven at 350 degrees Fahrenheit for 8 minutes or until fork-tender.
➤ Take these out and stuff with the potato mix and top with cheese.
➤ Broil the tops until the cheese has caramelized and become golden.
