Ingredients:
1. 2 cups fresh strawberries, hulled and halved
2. 1 cup granulated sugar
3. 1 tablespoon lemon juice
Instructions:
1. In a bowl, combine strawberries and sugar. Let them sit for 30 minutes to allow the sugar to macerate the berries.
2. Transfer the strawberry mixture to a saucepan. Add lemon juice and stir well.
3. Bring the mixture to a gentle boil over medium heat, stirring occasionally
4. Reduce the heat to low and simmer for 15-20 minutes or until the jam thickens. Skim off any foam that forms on the surface.
5. To test the consistency, place a small amount of the jam on a cold plate. If it wrinkles when touched, it's ready.
6. Remove the saucepan from heat and let the jam cool for a few minutes.
7. Transfer the jam to sterilized jars and seal. Allow it to cool completely before refrigerating.
