Ingredients:
- Zoodles: 250 Gms
- Red Cabbage (finely chopped): 1 cup
- Cherry Tomatoes (halved): 1 cup
- Yellow Bell Pepper (finely chopped): 1/2 cup
- Carrot (finely chopped): 1 cup
- Boiled Corn: 1 cup
- Cilantro: To garnish
- Garlic Cloves (finely chopped): 3 Pcs
- Grated Ginger: 1 tbsp
- Oil/ Butter: 1 tbsp
- Peanut Butter: 2 tsp
- Soy Sauce: 2 tsp
- Rice Vinegar: 1 tsp
- Sesame Oil: 1-2 tsp
- Chilli Sauce: 1-2 tsp
- Honey: 1-2 tsp
- Crushed Red Chilli Flakes
(Optional: use as many veggies as you like for this recipe. Add Protein/ Tofu/ Paneer as per your choice)
Recipe:
- In a large pan, add the oil, garlic, and ginger and let it cook for a few minutes.
- Add the liquid sauce ingredients- peanut butter, soy sauce, rice vinegar, sesame oil, chilli sauce, honey and mix well. Add 1-2 tsp water if the sauce starts sticking to the sides of the pan and let it come to a boil.
- Taste the liquid In the pan and add more of the sauces as required as per your taste palate
- The zoodles don’t need to be boiled like noodles/spaghetti so you can add them in the end and mix well and cook for 1-2 mins or until it’s fully cooked. You can check by cutting through a Zoodle, and if it cuts through easily it’s ready.
- The quantity of the zoodles will shrink once added to the pan so if you are eating only the zoodles as part of your meal, it’s safe to keep another batch of zoodles ready.
- Empty the spicy zoodles into a bowl, top with herbs, crushed peanuts, cilantro, scallions or toppings of your choice and enjoy when hot!
