Makes 2 portions 

Ingredients:

2-3 cups of lettuce washed and thinly sliced 
1-2 cups of boiled corn 
1 cup cherry tomatoes, cut into halves 
1 cup of finely diced red cabbage
1/2 cup finely chopped onion 
1/2 red/yellow bell pepper
1 ripe avocado diced or cut into cubes 
Chopped fresh cilantro to garnish 
1/2 cup cheese
1 cup cooked black beans
Salt and pepper to taste
1 Lemon juiced
Dressing of choice - balsamic vinaigrette, ranch etc. 
Optional: crushed nacho chips and any vegetables of your choice!

How to make?

- Finely chop or slice the veggies required for the salad bowl 

- Take a large bowl and layer the vegetables in rows to create a rainbow look. Also, add the boiled corn and beans. 

- Once ready, top it with cheese, salt, pepper, lime juice, dressing and toss everything to ensure it’s mixed well and evenly 

- Serve individually or top the entire bowl with some more cheese and crushed nacho chips for the extra crunch and consume immediately!
