Pav Bhaji Fondue

How to make Chef Oindrila's Pav Bhaji Fondue?

Serves 6
- 1 pack pav
- Butter - 3 tbsp
- Butter - 1 tbsp
- Oil - 2 tbsp
- Tomatoes - 2 chopped
- Capsicum - 1/4 chopped
- Onion - 1 medium chopped
- Carrots - 1 small chopped
- Boiled potatoes mashed - 1
- Beans - ¼ cup chopped
- Peas ¼ cup
- Cauliflower - 1/4 cup chopped
- Green chillies- 2 chopped finely
- Coriander - 2 tbsp
- Ginger Garlic paste- 1 tbsp
- Salt to taste
- Sugar 1 tsp
- Kashmiri Red chilli powder - 1 tsp
- Turmeric - ½ tsp
- Cheese - 1 cup
- Milk - ½ cup
- Fresh cream - ½ cup
- Pav bhaji masala - 2 tbsp
- Water as needed

- Cut the carrots, cauliflower and beans into tiny pieces. Boil it in 1-2 cups water with
½ tsp salt added. Strain the vegetables and keep the stock on the side.
- Now chop the tomatoes, onion and capsicum also into a fine dice.
- In a kadhai, heat the butter and oil together. Add in the onion and saute till slightly
caramelized. Add in the ginger garlic paste. Cook for 2 minutes and add in the
tomatoes. Cook further for 5-7 minutes and add in the boiled vegetables, potato,
green chillies and using a masher mash it down well while cooking.
- Add in the pav bhaji masala, red chilli powder, sugar and salt to taste. Cook for
another 5 minutes and add in 1 cup of the stock water. Cook for another few
minutes till it's all cooked through. Cool it down and then puree in a blender.
- Add the pav bhaji puree back to the kadhai. Add in the milk, cream and cheese and
cook till it's bubbling and the cheese has melted.
- Transfer to a fondue bowl and serve with small pieces of butter pavs.
