Corn Chowder Soup Recipe

Ingredients:

- 2 cups corn kernels
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 celery stalks, chopped
- 1 large carrot, chopped
- 3 cups broth/ water (vegetable or chicken)
- 1 cup milk or cream
- 2 potatoes, diced
- 1/2 teaspoon thyme
- Salt and pepper to taste
- Optional: Green onions, or cheese for garnish

Instructions:

Roast Corn:
- Preheat the oven to 400°F (200°C). Toss corn with 1 tablespoon of oil, salt, and pepper. Roast for 15-20 minutes until crispy.

Sauté Veggies:
- In a pot, heat the remaining oil over medium heat. Sauté onion, garlic, celery, and carrot for 5 minutes.

Cook Soup:
- Add broth/ water, potatoes, thyme, salt, and pepper. Boil, then simmer until potatoes are tender, about 15 minutes.

Blend and Add Milk:
-Partially blend the soup. Stir in milk or cream and half of the roasted corn. Heat through.

Serve:
-Top with remaining roasted corn. Garnish with green onions, or cheese if desired.
