Curry leaves are aromatic leaves with a strong influence on Sri Lankan, South Asian, and Southeast Asian cuisines. It measures around 2 to 4cm in length with an elliptical shape and a pointed tip. When young, these leaves are bright green and turn into a darker shade as they mature. 

On the taste palette, curry leaves have a citrusy and mildly bitter taste to them. On the flavor side, it's slightly spicy, nutty, earthy, and with a hint of citrus on top of it.

Curry leaves are used across various cuisines be it for curries, stews, soups, or rice dishes; savory dishes such as fried snacks, marinades, and pickles; and South Indian dishes such as rasam, and sambar to name a few.

Shelf Life and Storage

The shelf life on curry leaves is between two to three days although they last much longer when kept wrapped in a paper towel, put into a plastic bag, and stored in the fridge. Dried curry leaves can be stored in an airtight container without any refrigeration.
