Mango Sago

Indulge in this luscious, chilled tropical treat that combines chewy sago pearls with the velvety sweetness of ripe mango and a creamy coconut base.

Prep time: 25 minutes (plus chilling) | Serves 4 to 5

Ingredients:

Mango Sago Base:
➤ 1 bottle (250 ml) Pluckk Mango Juice
➤ 1/3 cup Small Sago (tapioca pearls)
➤ 200 ml Coconut Milk (or chilled dairy milk)
➤ 1 Ripe Mango (diced small)
➤ 2–3 tbsp. Sweetened Condensed Milk (optional)
➤ 1–2 tbsp. Honey or Sugar (to taste)
➤ 3 tbsp. Tender Coconut Malai chunks (optional)

Garnish:
➤ Extra Mango cubes
➤ A sprig of Mint

Preparation:

➤ Bring a pot of water to a boil and add the sago pearls; cook for 10–15 minutes until mostly translucent, stirring occasionally.
➤ Drain the sago and immediately rinse under cold running water to remove excess starch and stop the cooking process.
➤ Dice the ripe mango into uniform small cubes, setting aside a few for the final garnish.
➤ If using tender coconut malai, chop it into small, bite-sized pieces.

To assemble the Mango Sago Dessert:

➤ In a large mixing bowl or jug, whisk together the Pluckk Mango Juice, coconut milk, and sweetened condensed milk until smooth.
➤ Stir in the cooked, cooled sago pearls and the diced mango cubes.
➤ Fold in the tender coconut malai chunks to add a soft, tropical texture.
➤ Taste the mixture and add honey or sugar if additional sweetness is desired.
➤ Transfer the mixture into individual serving glasses or bowls.
➤ Refrigerate for at least 1 hour to allow the flavors to meld and the dessert to become thoroughly chilled.
➤ Before serving, top with the reserved mango cubes and a sprig of mint for an elegant finish.
