Your new favourite way to enjoy corn on the cob is here. Try this scrumptious, vibrant dish fresh off the streets of Mexico. Our Elote combines the sweetness of grilled corn with a generous slathering of hot-sauce doused mayonnaise & the savoury goodness of Parmesan. Easy & delicious!
Ingredients:
- 3 American Sweet Corns
- 3 to 4 heaped tbsps of Mayonnaise
- ½ an Avocado (cubes)
- Pickled Jalapenos (to taste)
- Green Chillies (to taste)
- ½ Green Bell Pepper (smoked & finely chopped)
- Coriander (leaves and stem, finely chopped)
- Black Olives (to taste)
- ½ Onion (finely chopped)
- ½ Onion (finely slices)
- Lemon Juice (to taste)
- Any Hot Sauce (to taste)
- 1 heaped tsp Cumin Powder
- 2 tbsps Sweet Paprika
- Salt (to taste)
- Black Pepper (to taste)
- Chaat Masala (optional)
- Grated Parmesan (to taste)
Preparation:
- Remove the husk from the corn and grill it on the flame until you get an even char.
- Mix the mayonnaise with a hot sauce of your liking and whisk thoroughly.
- Chop the jalapenos and olives into fine dice.
- Take an onion, slice one half into fine slices, and make small dice with the other half.
- Make small slits in the green chillies.
- Char capsicum on the flame until the skin turns black.
- Rinse the capsicum to remove the skin and chop the flesh into fine dice.
Assembly:
- Take a large knife and shave the ears off the corn cobs into a large bowl.
- Add dollops of the spicy mayonnaise to the corn and give it a quick stir.
- Toss in all the other ingredients and the spices and give it a squeeze of lime.
- Give it a good stir and check for seasoning.
- Transfer this to a large bowl and grate some Parmesan for good measure.
- Top this with your spice mix and any other ingredients you like.
