Cauli rice Poha

Cauli rice poha has the potential to be a breakfast for people opting for the keto diet. This keto poha or cauli poha contains all the essential requirements to kick-start your day with a bang. Let's make it.

- Add some Olive oil & mustard seeds to a large saucepan.

- Once the seeds start to splutter, add a few curry leaves & green chillies & let them crackle.

- Now, sauté some julienned onions for a few minutes, till they turn translucent.

- Finally, add cauli rice into the saucepan along with some salt, red chilli, and a pinch of turmeric & cook for a couple of minutes.
- Serve in a bowl with a wedge of lime, shavings of coconut & a handful of chopped coriander. 

Cauli Rice and Quinoa Salad

A hearty breakfast recipe or a light evening snack, this salad recipe works wonders. No matter what time of the day. 

- In a stockpot, boil a half cup of quinoa for some time. In another pan, add 1 tbsp of olive oil and stir-fry some bell peppers, carrots and beans for 7 to 8 minutes. 

- Chop some cucumbers, red onions, tomatoes &  lettuce leaves and put them aside.

- Wait for quinoa and stir-fry veggies to cool down. 

- Finally, mix all the ingredients and add a dressing of olive oil, lime juice, apple cider vinegar, salt & pepper. 

Cauli Rice Sushi

Replace the carbohydrate-rich sushi rice with Cauli rice in this Japanese favourite. 

- Take one cup of cauli rice and toast it in a heated pan to evaporate the excess moisture. 

- Mix the cauli rice with Sushi vinegar. Spread this mix over your Nori Sheets. 

- Chop vegetables like carrots, cucumber, asparagus and/or tofu for the sushi filling & place them evenly on the cauli rice spread. Don't stuff too much at once.

- Now roll your sushi along with the bamboo sheets and close the ends of the rolls.

- Cut them evenly and enjoy with soy sauce, wasabi & gari (pickled ginger)

Cauli rice fritters

These fritters are a great evening snack for the Monsoons. Perfect for those who love fried foods & yet want to keep a check on their calorie count. 

- Take a bowl of cauli rice and a half cup of grated cheese. 

- Add roasted cumin powder, coriander powder, red chilli, and salt & round them up into balls.

- Now, add oil to a deep wok and start frying these balls on medium heat until they turn golden.

- These fritters can be stored in the refrigerator for a few days in an airtight box and can be used later in preparing Manchurian or curries.

- Serve these hot along with a Chilli Crunch & some Black Bean Jam. 

 Stuffed cauli rice in bell peppers

This easy-to-make rustic dish is great for a warm family dinner.

- Take bell peppers, de-seed them, and remove their tailed tops. Brush them with olive oil and keep them aside. 

- In a wok, add cumin seeds, finely chopped onions, garlic & boiled potatoes, and stir-fry for some time.

- Now add cauli rice and steam it for 60 seconds. Put off the stove, take this mixture and start filling the bell peppers generously. 

- Place these stuffed bell peppers in the preheated oven at 375°F and bake them for 20-30 minutes. 

- Relish it with your favourite dip or chutney.

- Cauli rice is quite tender and gets mushy if you overcook tit Be careful with water usage, and don't leave it unattended on the heat.

- They don't need more than 3 minutes on medium heat to get fully cooked.

- Cauliflower has a distinctive smell due to the presence of sulphides. It's always best practice to use only fresh cauliflower rice and store it for no more than two days.

- You may add lemon juice or vinegar while cooking if you are not a fan of this smell. 

- Alternatively, you can also cook them with some subtle herbs like coriander or parsley to mask this smell.
