Ingredients: Serves 2-3
- 200 Gms Asparagus spears (woody ends removed)
- 2-3 tbsp Olive Oil
- 1 tbsp minced garlic
- 1/4 tsp black pepper (crushed)
- 1/2 cups mozzarella/ Parmesan/ cheddar
- salt to taste
How to prepare this dish:
- Preheat the oven to 200°C, and line the tray with baking paper.
-Arrange asparagus spears on a baking sheet. Ensure the woody ends are cut.
- In a small bowl mix together olive oil, garlic, salt and pepper. Drizzle the oil mixture over the asparagus and ensure it’s evenly coated
- Bake for 10-15 minutes and just beginning to get tender, use a fork or toothpick to check
- Remove the tray from the oven and top with the mozzarella cheese. Put the tray into the oven and broil or grill until the cheese melts and becomes golden. Takes about 2-3 minutes so keep a check to avoid burning or over baking.
- Add more salt and pepper, if needed. Serve immediately.
