Ingredients:
- 2 heads of broccoli, chopped
- 1 onion, chopped
- 2 cloves of garlic, minced
- 4 cups of vegetable broth
- 1 tbsp olive oil
- Salt and pepper to taste
- Optional: lemon juice and parmesan cheese for garnish
How to make?
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, cook until softened, about 5 minutes.
- Add chopped broccoli to the pot and stir to combine.
- Pour in vegetable broth, bring to a boil, then reduce heat to low and let simmer until broccoli is tender, about 15-20 minutes.
- Use an immersion blender or transfer to a blender to puree the soup until smooth.
