Ingredients: Serves 2
- 200g Broccoli rice
- 1 cup red cabbage finely chopped
- 1/2 yellow/red bell pepper finely chopped
- 1 cup boiled corn
- Cilantro to garnish
- 3 large garlic cloves finely chopped
- 1 large onion finely chopped
- 1 tbsp oil
- 1-2 tsp soy sauce
- Optional: 1 tsp vinegar or oyster sauce
How to make Broccoli Fried Rice:
- In a large pan over medium flame, add the oil followed by garlic and then the onion. Once you get the aroma of the onion-garlic mix, add in the other veggies and let it cook well for 4-5 minutes.
- Then we add in the soy (and other) sauces and let the veggies and sauces cook together and mix well.
- Broccoli rice does not need to be boiled and is like regular white or brown rice. Hence, it’s important to add the broccoli rice towards the end of the recipe.
- Then we add in the broccoli rice and mix well until it is thoroughly cooked roughly 4-5 mins. You can check this by tasting a small portion with a spoon.
- Empty the fried rice in a serving bowl, garnish with cilantro and serve hot!
