Treat your tastebuds to a smooth & refreshing winter soup with fresh winter vegetables.

Ingredients:

✦ Extra Virgin Olive Oil | 2 tablespoons 
✦ White Onion (finely chopped) |1 small
✦ Garlic (minced) | 1 clove
✦ Zucchini (cubed) | 2 medium 
✦ Vegetable Stock | 800 ml
✦ Mint Leaves (thinly sliced) | 2 tablespoons
✦ Avocado (diced) | ½ 
✦ Lemon Juice | 2 tablespoons
✦ Salt | to taste
✦ Cracked Pepper | to taste
✦ Spiralized Zucchini | for garnish
✦ Peanuts | 30 grams

To make this soup:
✦ Heat some olive oil in a large pan. Cook the onion and garlic until soft. 
✦ Add zucchini and cook until soft. 
✦ Add stock and bring it to a boil.
✦ Turn off the heat and add the pitted avocado, mint, salt and pepper.
✦ Allow it to cool and blend it in 3 batches. 
✦ Strain the soup and reheat on low flame until it begins to simmer. 
✦ Turn off the heat and stir in the lemon juice. 
✦ Garnish with spiralized zucchini and chopped peanuts.
