Try this Catalan recipe for flatbreads at home with leftover veggies or sweet peppers. 

Cook time: 1.5 hours minutes | Serves 4


Ingredients:

For the Pizza Base
➤ 1 cup white bread flour 
➤ ½ cup whole wheat flour 
➤ ½ cup all-purpose flour 
➤ ¾ tsp. fast-acting dried yeast
➤ ½ tsp. salt
➤ ½ tsp. sugar
➤ 1 tbsp. olive oil
➤ 1 ½ tablespoon Greek Yoghurt 
➤ ¾ cup Warm Water

For the Toppings:
➤ 1 onion
➤ ½ cup Green Peas
➤ 1 Capsicum
➤ 1 Red Bell Pepper & Yellow Bell Pepper
➤ 30 ml olive oil 
➤ 1 large clove of Garlic 
➤ Oregano (to taste)
➤ Salt (to taste)
➤ Pepper (to taste)
➤ Chilli Flakes (to taste)

Cooking:

To make the filling:

➤ Chop your veggies into small dices. 
➤ Cook the onions and peas together in a skillet over medium heat.  
➤ Cook the peppers in a separate pan until they begin to caramelize.

To make the dough:
➤ Combine flour, yeast, salt, and sugar in a bowl and mix well. 
➤ Make a well in the middle and add the oil, yoghurt and water. 
➤ Mix it well to make a sticky dough. 
➤ Roll the dough out onto a floured surface and knead it for about 5 minutes. 
➤ Add flour if required and knead it till the dough is soft and no longer sticky. 
➤ Form the dough into a ball and place it in a large oiled bowl. 
➤ Cover the bowl with a damp towel for 1 hour, or until the dough doubles in size. 

To make the Pizza:
➤ Preheat the oven to 220°C. Put baking sheets in the oven to allow them to pre-heat. 
➤ Roll out the dough on a floured surface and divide it into small portions.
➤ Roll the dough out with your hands and stretch it with your thumb from the middle. 
➤ Top the pizzas with the filling and bake for 10 to 12 minutes, or till golden brown.

To serve:
➤ Drizzle with olive oil and herbs of your choice.
