Looking for a way to give your yummy chaat a healthy twist? This Palak Patta Chaat is just what you need. Spinach is a superfood as it contains iron, magnesium, and calcium.

Ingredients: (Serves 2)

For the palak pakora
- 10-12 medium-sized palak (spinach) leaves
- 1/2 cup besan (gram flour)
- 1/2 tsp hing (asafoetida)
- 1/2 tsp red chilli powder
- 1/2 tsp turmeric powder (Haldi) 
- 1 tbsp rice flour (optional)
- salt as per taste
- 1-2 cups of water ( as per requirement)
- oil to fry the besan-coated palak 

For toppings on chaat 
- a handful of cherry tomatoes chopped as you like
- 1 onion finely chopped
- 1/2 cup boiled corn (optional)
- few pomegranate seeds
- a bowl of yoghurt 
- 1/2 cup pudina or green chutney 
- 1/2 cup sweet or tamarind chutney 
- sev if required 

Optional: chaat masala, red chilli powder, salt, lemon juice

How to make this chaat:
- Rinse the medium-sized spinach leaves, using a kitchen towel, and ensure they are dried completely
- Take a bowl and add the besan, hing, red chilli powder, Haldi, rice flour, & salt and mix well.
- In batches, slowly add water until the mix forms into a thick flowing better to hold onto the spinach leaves
- Let it rest for 5-10 mins until then add oil to a Kadai or frying pan and let the oil heat up enough so it’s ready for frying
- Dip the spinach leaves in the thick batter, coat them well and slowly place them in the frying pan
- Move & turn it occasionally until it’s crispy (just like we make vadas or any other fried item)
- Remove it once crispy/light brown and set it aside. Remove any excess oil by placing it on tissues
- Place & arrange the fried spinach leaves on a plate
- Add the green & sweet chutney one after the other ensuring it's covering all the fried leaves equally 
- Top with onions, cherry tomatoes, pomegranate seeds and other vegetables of your choice 
- Top the yoghurt (mix it for 30-45 secs so its smooth in texture) across the leaves
- Sprinkle chaat masala, salt, lime juice, chilli powder, sev etc., as per your taste preference
- Serve & enjoy immediately! (to avoid it getting soggy)
