Creamy Mushroom Risotto

Ingredients:

- ¼ cup onion [chopped]
- 1 tbsp olive oil
- 12 ounces mushrooms [thinly sliced, any variety]
- 1 cup arborio rice
- 2 tbsp butter
- ⅓ cup freshly grated Parmesan cheese
- 3 cups mushroom broth
- ½ cup defrosted peas [optional]
- Black pepper [as per taste]

How To Prepare?
- First up, warm the broth in a microwave for some time.
- Next on a pan add olive oil and mushrooms, and cook it until the latter softens a bit over medium-heat. Set it aside once done.
- Put a saucepan on medium-high heat, add onions and butter, and cook for 3 to 4 minutes. Add arborio rice to the mixture and let it cook until the rice starts to turn light brownish in color.
- Next the broth to the saucepan and stir it well until the excess liquid evaporates.
- Finally, add the mushrooms, ⅓ cup of parmesan cheese, parsley, pepper and salt as you need and viola, that’s how you prepare Creamy Mushroom Risotto.
- You can add defrosted peas or other herbs for garnishing as you need. 
- Serve it as a main dish or a side dish by adding asparagus or roasted broccoli to give it a zesty touch.
