Our First Recipe


In Chef's words, "A delicious vegetable stew like no other. Vegetable slices simmered in a rich and flavourful tomato sauce and served with a sprinkling of parmesan is everything that food critic Anton Ego (from the animated feature film, Ratatouille fell in love with). And you shall too."

How to make Chef Oindrila's Ratatouille
Zucchini yellow sliced - 1
Zuchhini green sliced - 1
Long brinjal - 1
Capsicum - 1 cut into squares
Tomato slices
Onion - Cut into squares

Tomato sauce
Olive oil - 2 tbsp
Tomato puree - 2 tbsp
Onions chopped - 1 large
Tomatoes crushed - 4-5
Tomato sauce - 2 tbsp
Garlic minced - 1 tbsp
Mixed herbs - 1 tsp
Chilli flakes - 1 tsp
Basil fresh - 2 tbsp chopped
Sugar - 1 tbsp
Salt to taste
Cornflour - 1 tsp

1. Heat the olive oil in a pan.
2. Add in the onion and garlic and the mixed herbs. Saute till onions are translucent.
3. Add in the crushed tomatoes and tomato sauce, chilli flakes and simmer over low heat till the tomatoes are cooked.
4. Add in the sugar, salt, chilli flakes and basil.
5. Balance the taste. Add in the cornflour after removing from heat.
6. In an oven-proof bowl, add the sauce.
7. Now layer the vegetable slices alternating. Sprinkle over salt to taste and black pepper.
8. Bake in the oven for 45 minutes at 200C.
9. Once out, sprinkle with parmesan and serve hot.
